Easy Homemade Greek Yogurt

It’s so simple. It’s so delicious. It’s so healthy.

This is just really simple, remember you can add some flavors, if your like to do that. Or even make this with Peanut Butter, cocoa powder, chocolate or berries and freeze it after you’re done, and then you have frozen yogurt!

All you’ll need:

  • Plain Natural Yogurt
  • Coffee filters
  • More? No!

Depending on how much Greek Yogurt you want, take 3 cups of yogurt. I eat it over two days, though I didn’t eat it alone; This little thing sure got popular at breakfast. Put it in the coffee filter, over a measure cup or anything else that fits in the size of your filter.

Let it stand the night over, about 8 hours. In the morning you’ll see water in the cup, because all the water is been removed.

There you go! Now you have your own homemade Greek Yogurt, which taste so good with some walnuts, almonds, a little bit of honey or Maple Syrup, if you’re a sweet tooth,  or maybe even some mysli. Just something you like, fruits, peanut butter, something crunchy is nice, too.

Pizza cake?!

Yes, indeed I eat pizza for breakfast! But this kind, is a CAKE pizza. So it must be twice as good, right?

Yes!

Who says, you can’t eat cake at mornings? Maybe your mother told you so, but then it’s time to change that rule.

I decided to try making it. I recommend to eat it right away, though I didn’t, but it can surely be eating the next morning, if you’re in a hurry like me. This is entirely Chocolatecoveredkatie.com ‘s recipe, with some few changes.

Recipe:

1/2 Cup of whole-grain spelt meal or whole-grain pastry flour. The pastry flour will make it a little more crumble.

1/2 cup water (or milk, for a more creamy taste.)

2 small tablespoons of oil, coconut oil, olive oil, veg oil etc. You can also smash a banana, for those who loves banana. Even apple mush will work good.

2-3 handfuls of blueberries frozen/fresh, or anything you like! Try it with almonds, walnuts, other berries or chocolate!

1 teaspoon baking powder.

1-2 teaspoons sweetener, such as Stevia. Depends on how sweet you like it, but I used about 2 teaspoons.

Pinch of salt.

Optional: 1/3 teaspoon vanilla essence or corns from 1/3 vanilla.

Optional: 1 teaspoon of cinnamon.

Ideas to topping:

Spread a thin layer of natural yogurt, maybe Greek yogurt, after it’s baked. Top with fruits, more berries, nuts or any other thing you like. If you made it with cinnamon, it taste delicious with a very scant layer of cinnamon on top.

Your dough:

Mix it all together, till it’s nice and almost smooth. Grease a pie form or any other form, which is about 6-10 cm in diam. Grease it good, with butter or oil. (I used oil, but again, if you use olive oil, it has a little taste).

Put your ‘pizza’ in the oven at 200 C in 10-15 min. Test it, if your not sure if it’s finish, by sticking a fork in the cake and it should come clean out.

EAT! My plan was to eat it over two days, so I would eat a half pie. Put it tasted so good, that I ended up eating 1/3 of the breakfast pizza!

Healthy, Crispy Oreos

Hello.

I’d always loved Oreos, the little round cookies, that’s like heaven in your mouth. But at some point, I had to realize, that the one you buys isn’t that healthy. But can I live without them?

Absolutely not!

Then we’ll have to make them healthier.

All you’ll be needing for the cookies:

  • 96 grams spelt or All-purpose meal
  • 30 g cacao powder + 2 tablespoons
  • 1,5 ml Stevia (Or any other kind of Sweetener)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Mix all the ingredients together. In another bowl mix:

  • 6o ml Oil (Veg oil, Olive oil, Coconut oil etc.)
  • 2 tablespoons Agave Syrup or Maple Syrup
  • 3 tablespoons milk of your choice.

Then mix the two bowls together. The dough should be a little crispy, but not so much that it falls apart. Maybe add a tablespoon more milk, if it’s all to dry. Put them in your refrigerate to chill in about 30 min.

In the meantime, preheat your oven to 150 degrees.  When your dough is ready, take it out and roll it in a thin layer. Use a small glass or anything else, with a round shape, to form your cookies. Bake them in 10 min., meanwhile make your cream.

With a spoon or so, make the cream of:

  • 65 grams Greek Yogurt (Or any other kind of natural un-flavored Yogurt, but I can’t be sure of that, I only tried using Greek)
  • 1/3 teaspoon of Vanilla essence
  • Sweetener to taste (I used about 1/2 teaspoon)

It’s a good idea to just cool your baked cookies a little, before your put the cream on. Otherwise it will easily be smudgy.

Put cream on one cookie and top it with another, with a cookie almost its size.

Done! Eat them, eat them! Maybe cool them a little before serving, then they’ll be a little more firm, but if you can’t wait – Then it really doesn’t make that much of a different.
